Here is a simple recipe that brings out the flavors of the fresh summer greens.
The ingredients you will need are
- 2 cups garden lettuce (Any Green Leafy Garden Produced Lettuce)
- 1/2 cup red cabbage sliced
- 3 diced roma tomatoes
- 5 tsps Red Wine Vinegar
- 1/2 cup chick peas (Ceci Beans)
- 3 tsps of Extra Virgin Olive Oil
- 2 tsps of Extra Virgin Olive Oil set aside for the Kale
- 1 cup Kale
- Oregano and basil Dry or Garden Fresh (Optional)
Soak the Kale in the olive oil for 10 - 30 minutes.
Olive Oil softens the texture of the Kale for a delicious flavor
Mix the vinegar and olive oil together in a larger bowl once the Kale has softened.
Ready to eat, and DELICIOUS!
